April Showers Bring May Flowers

There’s a special feeling about this time of year…the flower buds are popping out of the ground, the birds are singing in the skies and everyone is a bit happier in anticipation for spring and, yes, summer to come right around the corner. With spring comes a mix of rain and sunshine as it’s always a coin toss what the day will bring, but there’s no need to worry about the weather when you can create some tasty nibbles for yourself whether rain or shine.

They say ‘April showers bring May flowers’ so if you’re stuck inside on a rainy April day, why not bake up a batch of apple sauce muffins using any of the Musselman’s varieties? These muffins are the perfect breakfast when paired with protein-rich Greek yogurt and fresh fruit as well as a tasty go-to snack for the kids mid-day when they’re getting stir-crazy. You can even spruce up these muffins to create dessert-like cupcakes and serve them with your child’s favorite frosting and fresh fruit. There are many ways to serve this recipe during a rainy day as many children even enjoy crumbled muffins atop a bowl of Musselman’s Apple Sauce with a drizzle of honey and fresh mint.

Golden Apple Sauce Muffins

Ingredients

  • 3 1/2 cups all purpose flour
  • 1 Tbsp. all-spice
  • 2 tsp. baking soda
  • 1 cup butter
  • 1 cup sugar
  • 2 large eggs
  • 2 1/3 cups Musselman’s Cinnamon Apple Sauce
  • 1 tsp. almond extract
  • 3/4 cup golden raisins
  • For Topping: Greek plain yogurt

Directions

  • Preheat oven to 350 degrees F. Prepare a muffin tin with non-stick baking spray.
  • In a large bowl, combine dry ingredients. In a separate bowl, beat wet ingredients. Slowly add wet ingredients to dry ingredients; mix well until combined. Add in golden raisins.
  • Transfer mixture to cupcake tins and place into the oven.
  • Bake for 20 minutes or until golden brown. Set aside to cool.
  • Top with a dollop of Greek plain yogurt.
  • Enjoy!

And for those days when the sun is shining, take your Musselman’s outside and create Apple Sauce Melon Clowns, which are easy and fun for kids to create and eat in the sunshine. Start with a fresh cantaloupe, slice it in half and discard the seeds. Give each child a half cantaloupe, filled with cottage cheese and Musselman’s Apple Sauce along with their choice of fun toppings such as cinnamon or dried cranberries for the eyes, cherry tomatoes for the mouth, sprouts for the hair, nuts as earrings or a necklace and wafer cookies for the nose. Toss in some fun sprinkles, ground flax seeds and nuts for some fun decorating as the kids will love to create their very own face using healthy and tasty foods. Simple, adorable and fun; this activity will let your family embrace their creative side and enjoy it as a snack, too!
