Memorial Day: Take-a-Long Recipes for Trips and Picnics

Memorial Day is right around the corner so it’s time to set the menu for your upcoming summer trips n’ picnics. On the agenda: Healthy, fresh fare that your family will love whether on the road to the beach or playing in the grass for a picnic. Now that the spring weather is here and the kids are excited to be out in the sunshine, these snacks are sure to put a smile on their faces and please their tummies as well. Not only are these recipes perfect for kids, but they pair perfectly for an adult gathering and BBQ. Be sure to wrap these well and place them over ice before serving for a delicious and refreshing bite that will last throughout your road trip, picnic or BBQ. Enjoy!

Tomato Basil Salad Dressing

Ingredients

  • 2 large Roma tomatoes, finely chopped
  • 2 Tbsp. white balsamic vinegar
  • 2 Tbsp. olive oil
  • 4 Tbsp. fresh basil, finely chopped
  • 2 scallions, finely chopped
  • 2 Tbsp. Musselman’s Apple Sauce
  • Sea salt and freshly ground black pepper, to taste

Directions

  • Combine all ingredients into a medium sized bowl; whisk until mixture is well combined.

Sweet n’ Spicy Hummus

Ingredients

  • 1 cup canned chickpeas, drained and rinsed
  • 2 Tbsp. lemon juice
  • 1 clove garlic
  • 3 Tbsp. olive oil
  • 1/3 cup Musselman’s Apple Sauce
  • ¼ cup fresh cilantro, finely chopped
  • ¼ cup fresh parsley, finely chopped
  • 1/8 tsp. chili powder
  • 1/8 tsp. cinnamon
  • Dash of sea salt and freshly ground pepper

Directions

  • In a blender, combine together all ingredients; process until creamy and smooth.
  • Serve with whole grain crackers, pretzels and vegetable crudités.

Homemade Granola

Ingredients

  • 4 cups old fashioned rolled oats
  • 2 cups honey roasted peanuts
  • 2 ½ Tbsp. sugar
  • 1 cup almonds
  • 1 cup macadamia nuts
  • 1 ½ cup sunflower seeds
  • 2 cups wheat germ
  • ¼ cup oil
  • 2 Tbsp. Musselman’s Apple Butter

Directions

  • Preheat oven to 350 degrees.
  • Prepare a baking sheet sprayed with non-stick cooking spray.
  • Combine all ingredients in a large bowl; mix well.
  • Transfer granola mixture onto prepared baking sheet.
  • Bake for 1 hour; stirring the granola every 15 minutes.
