Ingredients

  • 1/2 cup banana, mashed
  • 1/3 cup butter, melted
  • 1/2 cup MUSSELMAN'S Apple Sugar
  • 1/2 cup non-dairy milk
  • 2 teaspoons vanilla extract
  • 1 cup flour
  • 2 teaspoons baking powder
  • pinch salt
  • 1/2 cup strawberries, finely diced, optional more for topping

Directions

  1. Step 1
    Preheat oven to 350°F. Grease a 24-cup mini muffin pan

  2. Step 2
    In a large bowl, combine the banana, butter, apple sugar, milk, and vanilla.

  3. Step 3
    In a separate bowl, combine the flour, baking powder, and salt. Add to the wet ingredients and stir well. Avoid overmixing.

  4. Step 4
    Fill each muffin cavity about ¾ full. Optional: add a few slices of strawberry to the top of each.

  5. Step 5
    Bake for 13 minutes, or until a toothpick comes out clean.
