Old Fashioned Apple Sauce Cake (low sugar)

Ingredients

  • ¼ cup reduced-calorie margarine
  • ½ cup granular sugar substitute
  • 3 4 oz. cups MUSSELMAN’S® Lite Apple Sauce
  • ¼ cup fat-free milk
  • 1 egg or equivalent in egg substitute
  • 1 ½ cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 ½ teaspoons apple pie spice
  • ¼ cup walnuts, chopped, divided
  • 1 8-ounce package fat-free cream cheese
  • 1 Tablespoon granular sugar substitute
  • 1 teaspoon vanilla extract
  • ½ cup reduced-calorie whipped topping

Directions

  1. Step 1
    Preheat oven to 350°F. Spray a 9x9-inch cake pan with butter-flavored cooking spray.

  2. Step 2
    In a large bowl, cream margarine and 1/2 cup sugar substitute.

  3. Step 3
    Stir in apple sauce, milk, and egg. Add flour, baking powder, baking soda, and apple pie spice. Mix gently to combine.

    Fold in 2 Tablespoons walnuts.Spread batter into prepared cake pan.

  5. Step 5
    Bake for 20 to 25 minutes or until a toothpick inserted in center comes out clean.

    Place cake pan on a wire rack and allow to cool completely.

  7. Step 7
    In a medium bowl, stir cream cheese with a spoon until soft. Add remaining 1 Tablespoon of sugar substitute, vanilla extract, and whipped topping. Mix gently to combine.

  8. Step 8
    Spread mixture evenly over cooled cake. Sprinkle remaining 2 Tablespoons walnuts evenly over top. Cut into 8 servings. Refrigerate leftovers.
