In a medium bowl, combine the apple butter and peanut butter until fully and creamy.
Spread about 1 teaspoon of the mixture on half of the crackers and set aside.
In a microwavable bowl, heat 1 cup of the white chocolate chips on high, stirring every 30 seconds until just melted and smooth.
Spread about 1 teaspoon of chocolate on the remaining plain crackers. Melt more chocolate until the crackers are covered.
Sandwich together one white chocolate cracker with one apple butter cracker.
Let the crackers cool 10-15 minutes to make sure the chocolate is not hot. Best when eaten the same day they are made.
For holiday or party fun, dip half of the finished cracker stack in additional white chocolate and then colored sprinkles.
