Peanut Butter Apple Butter Thumbprints

Ingredients

  • 1 ¼ cups flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup smooth peanut butter
  • 1/2 cup butter, at room temperature
  • cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ cup sugar
  • ½ cup MUSSELMAN’S® Apple Butter

Directions

  1. Step 1
    Preheat oven to 350°F. Line baking sheets with parchment paper. Set aside.

  2. Step 2
    In a medium bowl whisk together flour, baking powder, baking soda, and salt. Set aside.

  3. Step 3
    In a large bowl beat peanut butter and butter with a mixer until smooth. Add brown sugar, and continue to beat until fluffy. Add egg and vanilla, and beat well. Slowly add in dry ingredients, and mix until dough is combined.

  4. Step 4
    Pour sugar into a shallow bowl.

  5. Step 5
    Form a tablespoon of dough into a ball. Roll each ball in the granulated sugar, and transfer to baking sheets, spacing about 2 inches apart. Bake until cookies are puffy, about 10 minutes.

  6. Step 6
    Remove from oven, and make indentations in centers by pressing with a thumb. Return to oven, and bake an additional 5-8 minutes or until golden brown. Transfer sheets to wire racks, and let cool completely.

  7. Step 7
    Spoon about 1/2 teaspoon of apple butter into each cookie. Store in an air-tight container.
