Cranberry Apple Sauce
Often, people either reach for or recoil from cranberry sauce. Did you know, though, that adding apple sauce takes away some of the tartness of cranberry sauce by sweetening it up (without the extra sugar)? This year, as your fresh cranberries soften and simmer on the stove, stir in a cup of plain apple sauce and a teaspoon of lemon juice. Still not sweet enough? Add another ½ cup of apple sauce — and convince those cranberry sauce naysayers that this is really good stuff.
This one steals the show when served piping hot, straight out of the oven. On top of that, it’s a cinch to prepare. Just boil four sweet potatoes in water until tender. Peel and slice the potatoes, and place them in a buttered, shallow baking dish. In a separate bowl, combine two cups of apple sauce, one tablespoon of Dijon mustard, and ⅓ cup of brown sugar. Apple Sauce Turkey Stuffing
Tired of the same old turkey? Spice it up with this simple, one-of-a-kind stuffing. In a large bowl, combine two cups of mashed sweet potatoes, 2 ¼ cups of plain apple sauce, 2 ½ teaspoons of brown sugar, ¼ teaspoon of salt, and ½ teaspoon of cinnamon. Stir well, and stuff it in your turkey before cooking. Then watch as your family members follow their noses to the sweet aromas wafting from your kitchen.
The nutty, sweet taste of acorn squash is one of fall’s most delectable treats, and this recipe combines it with just the right flavors. Cut 2 acorn squash in half, remove the seeds, and roast them upside down on a buttered baking dish for 30 minutes. Meanwhile, sauté ¼ cup of chopped onion for 3 minutes, and add 1 pound of ground pork sausage. Cook until the meat is no longer pink, and then remove it from heat and combine it with 2 cups of apple sauce and 1 egg. Form the mixture into 4 balls.
Next, remove the squash from the oven, turn it over, and sprinkle it with 2 teaspoons of brown sugar. Place one sausage ball in each squash, cover the baking dish, and bake in the oven for 15 minutes. Remove the cover and bake for an additional 15 minutes, or until the squash is tender.
