Oatmeal Apple Butter Cookies

Ingredients

  • ¼ cup butter, softened
  • 1 cup brown sugar
  • 1 egg
  • ¾ cup quick oats
  • ½ cup MUSSELMAN’S® Apple Butter
  • 1 cup flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 Tablespoons milk
  • ½ cup walnuts, chopped
  • ½ cup raisins

Directions

  1. Step 1
    Preheat oven to 350°F. Line cookie sheets with parchment paper.  (A Greased cookie sheet will work but cookies may spread more.)

  2. Step 2
    In a mixing bowl, cream butter and sugar about 30 seconds until just combined. (Do not over beat.)

  3. Step 3
    Beat in egg, oats, and apple butter.

  4. Step 4
    In a medium bowl, combine flour, baking soda, baking powder, and salt. Gradually add to creamed mixture along with milk. Beat until blended.

  5. Step 5
    Stir in nuts and raisins. Chill dough at least 15 minutes.

  6. Step 6
    Drop by teaspoonful onto a cookie sheet. Bake for 15 minutes or until the edges are brown.

    Good cookie! Half chewy, half cake-like. Just about right on the sweetness.
    Instead of raisins, we added a finely minced gala apple. It cooked just perfectly. Mounded the chilled dough into heavy teaspoons yet they still went pretty flat. We will definitely make these again.
